The best-a beautiful Foie Gras nougat dusted with cocoa which dissolved gloriously on the tongue yielding beautiful long, deep flavours.
A lobster puree-like lobster custard in texture, studded with green jewels of mint oil and served with a mint foam and a swirl of cocoa (again) beneath the puree-lobster and mint sounds unlikely but the mint was played right down and the puree sang of fresh lobster, with the chocolate pinging in a perfect end note
A "soup" of Comte cheese and onion-the cheese and onion combo for foodies, comfort food of the most refined kind
Lightly smoked pigeon with rice infused with intense pigeon stock like a pigeon risotto.
This menu (the chef's "surprise" menu) cost 85 Euros and we drank lots of fabulous wines at prices lower than you could buy retail in London. An excellent, inventive, satisfying meal, and a bargain to boot.
