Book a month in advance and specify the roman paella with rabbit, chicken and snails

They will offer to plate it or serve in the cooking pot, choose the latter. They will serve with flat wooden spoons so you can scrape the crunchy bomba from the pan

While in Valencia make sure you go to Tasca Angel for sardines and All I pebre and to Casa Montana in Cabanal for some of the best tapa

My friends also say La Rosa. And Ca' Sento which also has very good fideuà

La Rosa and Ca' Sento are good in Valencia city. If it's Valencia the region, go to Alicante and try La Sirena and Paco Gandia
