I had dinner with Jason the other night, though sadly I missed The Mint. His coverage of Triangle dining is exemplary. By the end of his stint down here Jason is going to know more about the local dining scene than the locals and have covered it better than the local critics. It's fun to watch.

it absolutely enrages me that one writer could cause the city's only fine dining establishment to go out of business because they lack an understanding of modern cooking methods and trends. The review that came out today on the News and Observer written by Greg Cox is so full of innacuracies and inexperience and flat out laughable statements about haute cuisine that it's not even funny. Nothing like this would be allowed to be printed in any major metropolitan newspaper.

For those that aren't aware of the Observer's rating system, it has five "stars". This place got a three and a half, and its the highest-end restaurant in the entire city. Its ludicrous, they have fast food restaurants that have higher ratings than this. It's the only place where they are doing Sous Vide anything or exclusively sustainable anything.
