How come people like to go so close to the opening of a place?

I made reservations for next week a while back...but I have to say...the menu looks very safe and boring. I don't really need to travel uptown for Balthazar. Hopefully there is more to it than that.

I find this an unfortunate name after the Chris Benoit affair. Pretty much kills my appetite. But I guess there isn't a lot of overlap between the McMahon & Ducasse crowds.

oh I'm sure the execution will be...but the question is whether that's enough to justify making it a destination (I don't think of Balthazar as one).
Bar Boulud is a bistro too...but it has an additional menu draw...
