C'mon over for a pork tasting... Tamworths, paprika bacon, tasso, and stuff like that

The Charlotte Observer discusses some of the pork available at the Mathews and Charlotte Farmers Markets...

Veres and Parsons specialize in pork from Tamworth pigs, an old English breed that's sometimes called a "bacon-type pig." The American Livestock Breeds Conservancy, based in Pittsboro, lists Tamworths as a "threatened" breed (which means: we need more Tamworths).

Now, Veres and Parsons aren't farmers who let grass grow under their feet. At their stands at the Charlotte Regional and Matthews Community farmers markets stands, they're always offering something new.

Tasso one week, rendered lard the next. This winter, they added a paprika-flavored bacon, and their proscuitto and breakfast sausage are now available at both Earth Fare stores in Charlotte.

About six months ago, they decided to try a new pig, the Hereford. Also on the ALBC list, it's an American breed with red-and-white markings. "Like a Hereford cow, but shorter," says Veres.

My only complaint was that if they need to charge me $30 because they're robbing the duck to pay the boar they might as well give me a more substantial portion of flour, water, and bits of meat.

Charlotte is a really difficult place to be a vegetarian...
