Leaf Lard Sources in NYC?

I left a message with Flying Pigs asking if I can buy some on Saturday at the greenmarket but thus far I have not heard back.

I saw snow-white leaf lard at FP a few weeks ago. Of course this was before I threw my hat in the ring for your pie party. You do know that you have to render it first, a rather smelly process...

Stupid question. How do you know if you have to render your lard? I assumed that you only had to render it if you got pork fat scraps.
